I don't know if it is just me but my AMS knob collects grime like nobodies business. Adds friction but looks like hell after just one AX event.

I am convinced it is something in the surface porousness of the Delrin. After weeks of daily driving it never happens.

It's probably due to the small coating of sweat you get when you're in situations of stress and your adrenaline is rushing. This would cause the so-called "grime" to wipe off onto your knob. Lol, knobknobknob.
